SCD Friendly

I have been experimenting with recipes that follow the Specific Carbohydrate Diet for the benefit of someone very dear to me and also for myself. It consists of foods that are more gentle on the digestive track.

I first learned of the SCD when I discovered RoostBlog around this time last year. She has beautiful recipes that follow the legal/illegal list – you can read more about that here. Gluten, grain, soy and sugar are all on the illegal list which works out perfectly for me because I cannot tolerate those things as it is.

Here are some breakfast food choices that follow the SCD:

Coconut Flour Pancakes

Almond & Yogurt Waffles

Breakfast Pizza with Gruyere & Baked Eggs (I left out the bacon)

Sorry to disappoint, vegan followers. But a Merry Christmas and Happy Holidays to all.

Cooked & Raw

During and after we were hit with that random snowstorm & while there was still snow on the ground I was craving cooked foods over raw foods. Well, now that the snow has melted away and the temperatures have spontaneously increased, my body is screaming that it only wants uncooked foods. Perhaps the weather change and appetite change were coincidental, but then again, perhaps they do coincide. Anyway, I was feeling rather sluggish and foggy after Hurricane Sandy strolled on in and the snow  covered over the last leaves of fall …. so, I decided to do somewhat of a detox. I don’t think I could possibly eat any healthier than I do on a daily basis, so in saying that, this ‘detox’ is/was simply having raw foods instead of cooked until.. well, until I want them again.

Prior to my  raw food cravings I had made a couple of dishes filled with carotene galore. Carotene-filled foods are a real blessing in the winter months when we tend to not get as much sun because they can possibly provide you with a little nature coloring (depending on each individual). Personally, the bottom of my feet get a slight orange tint when I eat a lot of orange foods. Awkward.

Before sudden raw food cravings….

Hemingway, Psychology & Vegan Eats

Short break from Hemingway and my psych extra credit essay. No worries, I’ll be asleep by 11pm (that’s an adequate amount of sleep for your typical college student). Anyway, Hemingway is brilliant and he’s a genius with short stories, so even if you don’t like to do a lot of reading, I’d still recommend him.

All English lit. references aside – here’s an array of different vegan eats from this past week plus tomorrow’s lunch:
