MY Gluten-Free Thumbprint Cookies Recipe

I couldn’t find a good GF thumbprint cookie recipe that I liked , so I put together my own for this one. Finally, I don’t have to cite a source šŸ˜€ . Even though I usually tweak up the person’s recipe I’m using anyways. So, if you use my recipe, give me some credit puhlease & thank you šŸ™‚

Homemade jam is said to last 2 weeks at most. Don’t want mine to go bad before I use it, obviously. Sooo, when I came home today I made my own Thumbprint Cookies:

  • 1/8 cup coconut oil
  • 3 Tbs agave
  • 1 Tbs vanilla
  • 1 organic egg
  • 1 cup almond flour
  • 1/4 cup arrowroot powder
  • homemade jam (recommended) / jam of choice

Preheat oven to 350. Mix together the wet ingredients (first 4). Add in the dry (almond flour & arrowroot). Blend together manually or with an electric mixer (I chose manually-not sure how the electric will work out). Spoon (and shape, if necessary) dough on parchment paper. Wet your thumb with water and press it gently into the dough to create indentation. Fill with your jam. Bake for 10 minutes. Let them cool. Finito.Ā 

An idea to make this more ‘Christmasy’ is to serve them up on a dark green plate.
