Blogging Between Classes


I’m taking a break from  Ernest Hemingway and trying my best not to yell at the ten people smoking at the only outside tables on campus where a bunch of signs so clearly read “NO SMOKING!” Now, that is inconsideration at its finest.

With that being said, here’s what I’ve eaten so far today plus my dinner:

 

 

Spirulina Superfood Protein Bowl (For Lack Of A Better Recipe Name)

Ingredients:
1/3 Cup Hemp Milk
1 Frozen Banana
1 1/2 t Spirulina Powder
1 Scoop Vanilla SunWarrior
2 t Chia Seeds
Goji Berries (For Topping)
Raw Almonds (For Topping)
Blend everything but the toppings

Mexican Black Bean Spaghetti

Ingredients:
Bed of greens of choice (I used arugula – spinach is another good option)
Black Bean Spaghetti (Cooked for 6-8 min) with a drizzle of EVOO
Jalapeño Salsa (onions, tomatoes, jalapeños, cilantro, lime juice, salt)
Avocado
Large Tomato
Yellow (Or Any Color) Pepper
Nutritional Yeast
Sunflower seeds
Assembly:
Start with your bed of greens. Put the black bean spaghetti on top, followed by the salsa, sliced avocado, tomato, and pepper. Toss on some sunflowers seeds, a dash of nooch (nutritional yeast), pink salt, and a bit of lemon juice. That’s it.
