Veggie Sushi with Jicama “Rice”

For the “rice”:

Jicama

Marinated shiitake Mushrooms (Marinate Mushrooms in Coconut Aminos, Olive Oil, Himalayan Salt [for at least an hour])

Pulse the jicama and shiitake mushrooms in a food processor just until they resemble rice.

Veggies:

Carrot (thinly sliced)

Cucumber (thinly sliceds, seeds & skin removed)

Avocado (thinly sliced)

*For those who are unfamiliar with jicama – it is a root vegetable that can be eaten cooked or raw. This link offers some basic information on the rice substitute.*
