Cashew-Based Lucuma Ice Cream

Lucuma Ice Cream



1/2 cup Lucuma Powder

1 Cup Cashews (soaked over night)

1 Tbs Coconut Butter

1/4 Cup Local Honey

1/3 Cup Filtered Water

Pinch of Himalayan Salt

Blend ingredients until smooth in Vitamix. Pour into a glass container. Put into freezer to set OR….

Stir in *Extra Ingredients*

Raw Walnuts

Cacao Nibs

Then place in the freezer.

Scoop into a bowl and drizzle with cacao syrup (“chocolate drizzle” : melted cacao butter + cacao powder) 🙂
