Key Lime Pie
For the Crust:
- 2 cups walnuts
- 1 1/2 cups dates (soaked in warm water)
For the filling:
- Zest from 8 limes
- Juice from 8 limes
- 2 cups cashews raw and not roasted or salted (soaked)
- 1 avocado
- 1/2 cup coconut manna
- 1/2 cup local honey
Process dates and walnuts together until ball of “dough” forms.
Press dough into bottom of springform cake pan (works best when hands are wet).
Process the zest, juice, cashews, avo, coconut manna and honey together until thick and creamy.
Pour filling over the crust in the springform cake pan.
Refrigerate for at least 2 hours (or until frozen).
