Peppermint Patties

Mint filling:

  • 1 Cup Cashews (soaked)
  • 2 TBS Coconut Manna
  • 3 TBS Local Honey
  • 1 tsp Peppermint Oil

Blend mint filling ingredients together in Vitamix.

Chocolate:

  • Cacao Butter (melted)
  • Cacao Powder
  • Local Honey (to taste)

Stir chocolate ingredients together (by hand).

  1. Line a muffin tin with small baking cups.
  2. Pour just enough chocolate into the baking cups to cover the bottom, then place in the freezer for 1 min. so the chocolate sets.
  3. Spoon in mint filling.
  4. Pour in enough chocolate to cover the mint filling.
  5. Place in the freezer for 30 minutes.
  6. Enjoy.
