SCD Eggs Benedict

Ingredients:
•Raw Organic Spinach
•Nitrate-Free Bacon
•Poached Egg (see how here)
•Salt & Pepper

Hollandaise Sauce:
•4 TBS Grass-Fed Butter
•1 TBS Lime Juice
•4 Egg Yolks

Directions:
Put the butter and lime juice in a pan over medium-low heat until the butter melts. Remove the pan from the stove top and add in the egg yolks. Continuously stir so that they mix evenly (for 30-60 seconds). Serve immediately.
