Peanut butter and chocolate are two of Mike’s favorite things, especially when they are put together. Needless to say, all of these cookies will be generously given to him and serve as his dessert for this week/as long as they last.
Flourless peanut butter cookies are nothing new, although they are generally sweetened with sugar. Alternatively, I used honey in place of cane sugar in this recipe and the result was just as good.
- 2 Cups Natural Peanut Butter
- 1/4 Cup Honey
- 1 tsp Vanilla
- 2 Eggs
- *Dark Chocolate Chips (not necessary)
Preheat the oven to 350 degrees F.
Mix the peanut butter, honey, vanilla and egg until well combined. *Stir in chocolate chips. Spoon 1 tablespoon of the mixture about 1 inch apart onto baking sheets lined with parchment paper. Flatten the mounds with a fork, making a crosshatch pattern on the cookies.
Bake for about 10 minutes. Transfer to racks to cool.
