Apple Slaw w/ Fennel Fronds, Mandarin Orange & Raw Slivered Almonds • Drizzled w/ Coconut Mango Balsamic


This salad is extremely refreshing and perfect for summer.

My boyfriend and I received A LOT of fennel in our last two CSA pickups. With our fennel abundance in mind, I intentionally put it in almost everything I made this past week…

I used the fennel fronds in this recipe, in an egg salad recipe, in a fennel spread recipe and in our garden salad.

No more fennel, please.

apple slaw

Ingredients:
2 spiralized apples
1 mandarin orange (peeled and cut)
1/4 cup fennel fronds
1/4 cup raw slivered almonds

Combine the first three ingredients. Top with slivered almonds and drizzle with coconut mango balsamic vinegar.
