I came up with an awesome cupcake/cake batter using various grain free flours!
Warning: If you are caffeine sensitive, then these particular cupcakes should not be consumed at night.
I used Original Chameleon Cold-Brew and raw cacao powder in the cupcake batter 😉
This recipe is free of grains, gluten, soy, dairy and cane sugar. It is considered Paleo by Paleo baking standards and if you omit the cacao, then this recipe can also be SCD friendly.
FYI the recipe is originally coconut free unless you top the frosting with shredded coconut, like I did.
