This peach salsa is made with local peaches and tomatoes from the backyard.
3 peaches, chopped
1/2 cup tomatoes, seeded and chopped
2 tbs diced red onion
1 tablespoon lime juice
2 tbs roughly chopped cilantro leaves
Salt and pepper to taste
Combine ingredients in a bowl and season with salt and pepper.
I used this salsa to dress up standard Applegate hot dogs. I also threw some grilled jalapeños on top, then put the whole concoction inside an Udi’s gluten-free bun.
