-4-6 TBS filtered water
-2 TBS gelatin (I use this kind)
-1 cup homemade vanilla almond milk (almond milk with 1 tsp vanilla bean powder/extract)
-2 TBS pumpkin puree
-2 TBS raw honey (more or less depending on how sweet you like it)
-1/2 tsp cinnamon
-dash of nutmeg
In a glass bowl (I use a medium glass Pyrex container), dissolve the gelatin into the filtered water. Then, in a saucepan, heat the almond milk, pumpkin puree and honey over medium heat (but do not bowl). Once the mixture is heated, pour it into the glass bowl/container with the gelatin. Stir in the spices and continue to stir until everything is combined. Place the pumpkiny liquid in the fridge for 1-2 hours until it sets. Enjoy with a spoon and possibly a dollop of coconut whipped cream and toasted pecans.
