In one of our first CSA boxes we received arugula. However, to our dismay, the greens went bad before we could use them. Arugula was not a part of the weekly shares again… until last week!
The arugula from Holcomb Farm was so fresh and pungent; when I chopped up a handful of these greens for this particular salad, their peppery smell permeated the entire kitchen.
-2 cups arugula (whole or chopped)
-1 radish, thinly sliced
-6 oz grilled chicken
-1 TBS goat cheese, crumbled (I use goat cheese from Beltane farm in CT)
-1 TBS Extra Virgin Olive Oil
-1 tsp red wine vinegar
-dash of garlic powder
-1/4 tsp honey
-sea salt & pepper
