-3 lbs potatoes, cut into quarters
-1 lb Hakurei turnips, cut into quarters or in half
-1 TBS fresh parsley, finely chopped
-3 TBS olive oil or duck fat
-crispy turkey (or regular) bacon, cut into bite-sized pieces
Preheat oven to 400 degrees. Line a baking tray with aluminum foil. Toss potatoes and turnips in a bowl with the oil/duck fat. Use hands to massage oil/duck fat onto the potatoes and turnips. Spread potatoes and turnips onto the prepared baking tray. Cook for 50-60 minutes, or until done. Transfer potatoes and turnips to a bowl, and then add crispy pieces of bacon and parsley. Serve immediately or store in the fridge for up to a week.
