Arugula Pesto Flatbread with Prosciutto


There are not many foods that can stand up to arugula, however, prosciutto is one of the few exceptions. Arugula pesto with thinly sliced prosciutto is a match made in food heaven.

Arugula has a very distinct taste. Some people (like me) love the peppery greens, but others cannot bare the strong flavor.

This is Caitlin’s recipe from Roostblog.com. I found it several years ago and it was a staple in my brother’s diet when he struggled with colitis. Thankfully, Matthew (my brother) is better now, but I still love the recipe.

Last September, when my boyfriend started his new job, I made this flatbread every week. He liked to bring two slices for lunch because they were easy to eat while crunching numbers and assessing risk. Actuaries actually need one hand free at all times, didn’t you know? Kidding.

By the way, this flatbread can last in the fridge for up to a week and freezes very well.
