Cappello’s Fettuccine with Sautéed Winter Kale, Sausage and Lemon Ghee Sauce



-1 package Cappello’s Gluten & Grain Free Fettuccine
-1 TBS oil of choice
-1 cup of kale chiffonade, ribs and stems removed
-3 oz turkey sausage or chorizo

Lemon Ghee Sauce:
-1 TBS freshly squeezed lemon juice
-1/4 tsp garlic powder
-1/4 tsp ground black pepper
-1 tsp sea salt
-1 TBS coconut milk
-4 TBS ghee, melted

Cook the Cappello’s by following the instructions on the package. Heat a skillet over medium high heat. Add the oil to the skillet followed by the kale. Cook the kale until the greens wilt and decrease in size. Remove the greens from the pan and set aside. Next, thoroughly cook the sausage/chorizo in the skillet. Remove sausage/chorizo from the skillet. Combine fettuccine, kale and sausage in a bowl. Mix lemon ghee sauce ingredients together until combined, then pour sauce over the fettuccine. Serve immediately.
