Honey Mustard Glazed Salmon with Mixed Greens, Bacon, Cranberries, and Pecans


-1 salmon filet with skin
-2 TBS whole grain mustard
-1 TBS raw honey
-2 strips center-cut bacon
-2 cups mixed greens
-1 1/2 TBS dried cranberries
– 2 TBS spiced pecans

Cook the bacon on a skillet over medium heat. Reserve the bacon grease. Put the salmon skin side down and cook for ten minutes. Then, flip the salmon over and cook for another ten minutes, or until the salmon is cooked all the way through. Peel the skin off the salmon and discard it.

Combine the mustard with the honey, and then brush the cooked salmon with the honey mustard glaze.

Serve salmon over a bed of mixed greens, bacon pieces, dried cranberries, and spiced pecan pieces. Dress with oil, aged balsamic vinegar, sea salt, and pepper.
