Kale, Sweet Potato, Black Bean, and Quinoa Salad with Chipotle & Lime

Ingredients:

-1 sweet potato, cubed and baked

-black beans, soaked and cooked

-1 head of kale, sauteed and cooked in coconut oil and salt & pepper

-1 cup quinoa, cooked

-2 TBS fresh lime juice

– 3 TBS olive oil

– sea salt and pepper, to taste

Combine all ingredients in a large bowl. Toss with fresh lime juice and olive oil. Season with sea salt and pepper to taste.
