Black Bean Burgers with Cumin and Roasted Red Peppers

Ingredients: 

-2 cups black beans, cooked or canned

-1/4 cup yellow onion, finely chopped

-1 flax egg

-1 TBS cumin seeds

-2 garlic cloves, finely chopped

-1/2 tsp paprika

-1 1/2 tsp salt

-1/2 tsp black pepper

-2 TBS olive oil

-1/2 cup Gluten-Free Quick Cooked Oats

-1 TBS arrowroot powder

Put beans in a food processor and process on high until the beans are almost entirely smooth. Add in the other ingredients until fully combined. Preheat oven to 400. Grease a baking tray with coconut oil or olive oil. Shape into 6-8 patties. Cook for about 15 minutes on each side, or until golden brown and cooked through. Serve immediately with roasted red pepper, goat’s feta (or vegan tzatziki), and a side of sweet potato fries. Alternatively, you may freeze the patties, separating them with wax paper, for 1-2 months.
