Cacao Rice Crispy Treats (Refined-Sugar Free)


rchoIngredients:

– homemade marshmallows (recipe below) / 1 bag vegan store-bought marshmallows*

– 1 box One Degree Sprouted Brown Rice Cacao Crisps

– 4 TBS raw cacao powder or 2 squares of a dark chocolate bar (100% cacao)

– 1/4 cup coconut sugar

– coconut oil or butter (for greasing)

– goji berries

Line a baking tray with parchment paper and set aside. Grease a large pot with coconut oil/butter. Heat pot over medium-low heat and add marshmallows. Once the marshmallows melt, add in the Cacao Crisps, cacao powder, and coconut sugar. Mix the ingredients together and remove from burner. Shape the Cacao Crisps into heart shapes and place on baking tray. Sprinkle goji berries/slivered almonds on the hearts before they cool. Cover and place baking tray in the freezer for at least an hour… and then give your hearts to your sweetheart 😉

Homemade Marshmallows:

– 1/2 cup coconut sugar

– 1/2 cup raw honey

– 1/4 cup gelatin

– 1 tsp vanilla extract

– coconut oil (for greasing)

In a saucepan, bring 1/2 cup of water, coconut sugar, and honey to a boil. Then, remove saucepan from heat. In a bowl, use a hand or stand mixer to combine 1/2 cup water and gelatin together. Slowly pour the warmed coconut sugar, honey, and water into the gelatin mixture while the mixer is still running. Add vanilla extract and let the mixer run for 10-15 minutes. Pour the marshmallow mixture into a shallow bowl that has been greased with coconut oil. Refrigerate until firm (approximately 1-2 hours).
