Roasted Garlic and Beet Hummus with Lemon Zest

Ingredients:

– 2 small or medium roasted beets

– 2 cloves of garlic, roasted

– 1 can of chickpeas, rinsed and drained

– 2 TBS tahini

– juice of half a lemon

– 1/4 cup olive oil

– 1 tsp sea salt

– 1/2 tsp ground black pepper

– lemon zest

First, pulse the beets and garlic in a food processor. Then, add remaining ingredients and blend until smooth.
