Dark Chocolate and Pistachio Cookies




– 1/4 cup sweet rice flour
– 1 cup Purely Elizabeth Original Oatmeal, ground into a fine flour
– 4 TBS raw cacao powder
– 1/2 cup coconut sugar
– 1/2 tsp sea salt
– 1/4 tsp xantham gum
– 1/4 tsp baking soda
– 2 TBS arrowroot powder
– 1 flax egg (2 TBS flax meal + 5 TBS water)
– 1/4 cup coconut oil, melted
– 4 oz dark chocolate, melted (I like Coconut Secret or Lily’s)
– 1/4 cup pistachio pieces

Preheat oven to 350. Line a baking tray with parchment paper–set aside. Combine the first 8 ingredients in a bowl and combine. In a separate bowl, combine the flax egg, coconut oil, and melted chocolate. Pour the wet ingredients into the dry ingredients and mix together. Then, fold in the pistachio pieces. Using a tablespoon, scoop the dough onto the prepared baking tray (if you want, you may shape/flatten the cookies with your hands). Bake for 10 minutes. Remove cookies from the oven and let them cool completely before serving.
