Purely Vegan Sandwich Bread





– 1 cup brown rice flour

– 1 1/2 cups warm water (110 F)

– 1 TBS active dry yeast

– 3/4 cup white rice flour

– 1/2 cup Purely Elizabeth Ancient Grain Hot Cereal, ground into a fine flour + sifted

– 2/3 cup potato starch

– 1/4 cup teff flour

– 2 tsp xantham gum

– 2 tsp sea salt

– 2 Ener-G Egg Replacers

– 2 flax eggs

– 1/4 cup coconut oil, melted + additional for greasing

Preheat oven to 350. Grease a 9 x 5 loaf pan and dust with flour. Combine the warm water, honey, and yeast in a medium bowl. Cover with saran wrap and let it sit for 10 minutes (or until it is foamy). In a separate bowl, combine the flours, potato starch, xantham gum, and sea salt. Beat the flax eggs, Ener-G Eggs, and yeast mixture into the flour mixture by hand (or with an electric mixer) until combined. Pour into the prepared loaf pan. Bake bread for 1 hour. Then, remove and cool completely.
