Big, Juicy, BEET Burgers

Fuel up for finals with my “Big, Juicy BEET Burgers”!beet burg

– 3 large (uncooked) beets, shredded in food processor

– 1.5 cups Cranberry Pumpkin Seed Oatmeal or Original Oatmeal

– sea salt and pepper

– 1/2 cup goat cheese

– 2 TBS olive oil

– 4 eggs

*olive or coconut oil for greasing

Preheat oven to 400 degrees. In a large mixing bowl, combine shredded beets, oatmeal, and salt and pepper. Next, add in the goat cheese, olive oil, and eggs. Stir to combine. Cover and then place the mixture in the fridge for 10-15 minutes. Grease a large baking tray with oil and remove the mixture from the fridge. Shape the patties by hand and then place them on the greased baking tray. Bake for 20 minutes on both sides.

Pairs well with white bean spread, garlic hummus, or tahini!

Serve with a side of my “Spicy Sweet Potato Fries” 😉
