Pumpkin Spice Oat Muffins

I have been so spoiled with my monthly shipments of Purely Elizabeth. I haven’t posted many recipes recently, but I indulge in my oats on a weekly basis.

This recipe makes for a quick and easy breakfast or snack. 

(Makes 1 serving! Quadruple the recipe to fill the entire muffin tin)


-50 grams Purely Elizabeth oatmeal

-1 egg OR 2 egg whites

-pinch of salt

-1 tsp cinnamon

-Pumpkin Spice stevia (or sweetener of choice)

-1/2 baking powder

Preheat oven to 350. Combine dry ingredients and then add wet ingredients. Mix together and then pour batter into a greased muffin tin. Bake for 15 minutes, or until slightly browned. Store in the fridge or freezer.
