-fat or oil for frying (optional)
-4 spicy chorizo, sliced, casings removed
-1 yellow onion, finely chopped
-2 garlic cloves, finely chopped
-2 liters of homemade chicken broth
-2 large pinches of saffron
-1 teaspoon smoked paprika
-3 cups brown basmati rice, or cauli-rice (if following SCD)
-1 small bunch flat-leaf parsley, chopped
-1 dozen shrimp
-1 lb mussels
Put a pan on medium heat (with cooking oil, if necessary). Add the sliced chorizo and fry until browned. Add the onion and garlic and cook until soft. Next, add the chicken broth with the saffron, followed by the smoked paprika, and rice. Leave this to cook on a medium heat, stirring from time to time, for about 20-30 minutes.
After approximately 20 minutes, the rice should be cooked. At this point, pour in the rest of the broth, plus the shrimp, clams, and mussels. Place a lid on the pan and cook for 10 minutes more.
Serve with chopped parsley and a lemon wedge, if desired.
